Peach Caprese salad

  
You will forget all about tomatoes and mozzarella after you make this salad! I have. Now, Caprese salad goes inherently with peaches. Forever. And it’s Mr. Sodium’s favorite salad (I’m pretty sure any salad with cheese makes the cut, but this one is the official favorite).

Ingredients:

Ciliegini mozzarella balls

Peaches, peeled and cut into chunks, similar in size to mozzarella balls

Basil, cut into ribbons (thin horizontal cuts across the leaves)

Olive oil

Balsamic vinegar

Combine in a bowl and serve. Too easy for measurements, just add everything to taste. 

Sodium count, 2 oz. mozzarella per serving: 220 mg 

 
Considering the mint plants that have taken over my backyard as of late, I might try this salad with mint instead of basil next time…
