cauliflower “rice” with eggs poached in tomato sauce

I’m between work trips and have the luxury of this weekend at home. Sleeping in on a Saturday morning, I woke up hungry. It’s nice and quiet with Hubs still asleep, so I can make what I want! Given the scarce contents of the fridge…

Back in July, before trade show season had set in, I tried the Whole30 way of eating. After a couple weeks and serious dairy and sugar withdrawals, I’d never felt better. I was sleeping through the night and my stress levels were under control, which are results enough for someone who routinely wakes between 3 and 4 am most nights. I told the 7 friends on this journey with me that I feel so good, I might become one of those annoyingly cheerful Paleo eaters! Now, if you took a peek at the above links, you’ll see that Whole30 and Paleo aren’t managed well on business travel, no matter what they say in the books. When trade show season started up in August, I decided to do my best on the road, but to revert back to Whole30 or Paleo when I’m home between trips.

In the freezer I had cauliflower rice from Trader Joe’s and a little homemade marinara sauce left over for just a morning like this. When I was a college kid studying abroad in Spain, my host mom made me rice with fried eggs and tomato sauce – and I’ve been hooked ever since. This is my Whole30 or Paleo version of this meal. And it. was. so. good.

If you haven’t given frozen cauliflower rice a whirl (basically finely diced cauliflower), I suggest you do so. It’s a perfect replacement for the texture, feel and blank canvas that rice serves in a recipe – and it’s easy. I’ve pan fried cauliflower rice before, but this time, I just dumped some in a bowl and zapped it in the microwave for 3 minutes. Done.

  1. Heat up cauliflower rice. I used the microwave for 3 minutes.
  2. Now for the sauce. Yes, I’m one of those annoying people who will freeze leftover sauce she makes and re-purpose it at a time like this. If you’re not like that, grab any canned tomatoes you’ve got, chop and drain them and that will work. You might want to season them a little. Then put those tomatoes with some olive oil, or your tomato sauce, in a small pan on medium heat until heated through.
  3. Crack eggs onto top of tomato sauce, cover and reduce heat to a simmer.
  4. Once egg yolks have a white sheen on top of them and the whites are opaque, they are ready. Spoon eggs and sauce on top of the cauliflower rice.

Easy delicious breakfast, all thanks to a couple freezer staples and eggs. Hopefully there’s some Kix around for when Hubs wakes up.
